Quiche – Simple & Tasty

One of my latest favorites is Quiche. Since we went to Strasbourg this spring we made Quiche about four times. It’s simple, quick and easy. Besides you can switch it up easily by changing the filling. Another advantages of Quiche is, that the leftovers make a great breakfast Below recipe is a vegetable variant, though try it with different vegetables or bacon. Also you can substitute the flour with whole wheat or almond flour.

Preparation: 30 Minutes
Cooling: 60 Minutes

Baking: 30 Minutes
Preheat oven to 390° Fahrenheit or 200°Celsius

For the dough you will need:
200 g flour equals 1 Cup
100 g butter equals ½ Cup
5 tablespoons water
1 pinch of salt
1 pinch of sugar

For the filling:
1 Zucchini
½ onion
1 bell pepper
3 eggs
100 ml heavy cream equals 4 oz
100 g cheese equals ½ cup
salt & pepper

Mix dry ingredients for the dough and add softened butter, knead the dough. Let the dough rest for an hour in the fridge. While the dough is resting chop vegetables and start to simmer the onions. Once onions are slightly browned add remaining vegetables and roast vegetables. Spice the vegetables as desired with salt and pepper, or add chili and basil.

Now mix in a bowl eggs, heavy cream and cheese afterwards fold in roasted vegetables. Take dough out of the fridge, roll out thin and lay in a pie form. Pour the filling into the pan and put quiche in the oven.

After 30 minutes enjoy a warm quiche, fresh out of the oven!
